Chef Blake Jackson marries two ideas at one address
Chef Blake Jackson has opened his second concept for South Shreveport’s latest dining destination: Heron, in the Provenance community. Led by Jackson, the two concepts reflect the chef’s love of both casual oyster dives and elevated fine dining restaurants.
The casual concept, Mae & Co., opened in September and focuses on fresh oysters from around the country, show-stopping fried chicken, culinary-driven po’ boys and elevated Southern staples. Jackson says it’s an homage to his roots and love of his origins. Mae & Co. has become a go-to hangout for residents in the area.
Heron’s fine dining concept opened its doors on Nov. 14. This high-end seafood house leans heavily into Jackson’s passion for the freshest fish and shellfish while also incorporating his long-standing support of local farmers and ranchers. Jackson also noted a sentimental connection to the name Heron. “In the Southern wild, the great blue heron is a symbol of safe harbor. Herons are only staying still in places they know are safe. The last few years for me have been a journey. Changes in life. Changes in business. Yet, something about this place felt right. Heron is my nod to this next chapter. A place to land — for myself and for the ones who grace our doors.” Heron will boast a top-tier program of coastal catch, high-end beef, seasonal local harvests and inventive global flavor combinations. Paired with a wine and cocktail program to highlight the bold flavors of his cuisine, Chef Jackson’s years of experience in personalized hospitality will drive home his vision for an “unforgettable night at our table.”
